Butternut Squash Bisque

Butternut squash bisque

A tasty beginning to your meal and low in calories.  You can blend this is a blender or food processor.  A blender will give a smoother result.

  • 2 pounds peeled and cubed butternut squash (often available already prepared and packaged in the produce section)
  • 1 cup chopped sweet onion (e.g. Texas, Maui, or Walla Walla)
  • 2 tsp freshly grated ginger
  • 2 tsp ground cinnamon
  • 2 cups water
  • 2 tbsp good-quality chicken stock base (I like “Better than Bouillon)
  • 1 cup applesauce
  • Low fat sour cream
  • Chopped parsley or cilantro

Put all ingredients in a large pot.  Bring to boil and then turn down to a simmer.  Simmer about ½ hour or until squash is soft.  Ladle ingredients in a blender or food processor and process until smooth.  Ladle soup into shallow soup bowls.  Sprinkle with parsley and top with a dollop of sour cream.  You can also top with a dollop of sour cream, swirl it into make a pattern and then top with parsley.  Serves 6.
