Haupia (coconut dessert)


Haupia is a staple dessert at Hawaiian luaus.  My friend Vladis, who grew up in Hawaii absolutely loves huapia.  I try to make it for her whenever I’m visiting.

  • 1 15 -0z can light coconut milk
  • 15 oz water
  • 3/4 cup cornstarch
  • 1/2 cup sugar
  • 1 tsp vanilla

Blend all ingredients except vanilla together in a saucepan whisking until sugar and cornstarch are dissolved.  Bring to a boil, whisking constantly until mixture thickens and you can stand the whisk upright in the mixture.  Remove pan from heat and let cool slightly.  when cool enough to touch the side of the pan, mix in vanilla. 

Pour the mixture into an 8 X 8 cake pan and refrigerate for at least two hours.,  Cut into squares and serve.

If you like, you can stir in 1 cup of freshly diced pineapple with the vanilla.  This version (with the pineapple) is served at the Old Lahaina Maui Luau.
