Turkey panini

turkey paniniAnother kitchen gadget I love is my panini press.  I don’t really need one (and this recipe shows how to make grilled panini without one), but I love having those grill marks on each side.

Panini

For each sandwich:

  • Two slices bread (I used my home made multigrain)
  • Mayonnaise and Dijon mustard
  • 2 slices good deli turkey
  • 1 slice jalapeno jack cheese
  • Non-stick spray
  • ½ avocado mashed
  • 3 slices tomato
  • Lettuce leaves

Spread mayo and mustard on one side of each slice of bread.  Pile turkey and cheese on on slice of bread and top with other slice of bread. Spray exposed sides of the sandwich with non-stick spray.  Grill on pre-heated panini press until cheese is melted and there are nice grill lines.  If you don’t have a panini press, you can grill the sandwich on a hot skillet with a heavy pan placed on top of it.  You will need to flip it around to brown the other side.

When the sandwich has been grilled, remove it from the grill, open it, spread mashed avocado on top of the turkey.  Add tomatos and lettuce.  Cut in half and serve.
